Grilled Chicken & Quinoa Bowl

Ingredients:

  • 5oz cooked chicken breast

  • 5oz cooked quinoa 

  • 1 c spinach

  • Red, orange, and yellow bell pepper

  • White onion

  • 1 tbsp olive oil or cooking oil of choice (to sautee the veggies)

  • 1 tsp lemon juice

  • Salt & pepper to taste



Directions:

  1. Grill chicken breast until cooked thoroughly or bake in the oven at 400 degrees for 25 minutes and cook quinoa according to package

  2. While chicken & quinoa are cooking, chop up peppers, onions, and spinach and add to a pan with olive oil

  3. Sautee veggies until tender, add salt and pepper to taste

  4. Add chicken, quinoa, and veggies to a bowl and drizzle with lemon juice
