Grilled Chicken & Quinoa Bowl
Ingredients:
5oz cooked chicken breast
5oz cooked quinoa
1 c spinach
Red, orange, and yellow bell pepper
White onion
1 tbsp olive oil or cooking oil of choice (to sautee the veggies)
1 tsp lemon juice
Salt & pepper to taste
Directions:
Grill chicken breast until cooked thoroughly or bake in the oven at 400 degrees for 25 minutes and cook quinoa according to package
While chicken & quinoa are cooking, chop up peppers, onions, and spinach and add to a pan with olive oil
Sautee veggies until tender, add salt and pepper to taste
Add chicken, quinoa, and veggies to a bowl and drizzle with lemon juice
