Mediterranean Pita Pocket

Ingredients:

  • 1 whole wheat pita, sliced in half

  • 70g chickpeas

  • 2 c mixed greens 

  • 1/4 onion, finely chopped

  • 1/2 tomato, chopped

  • 1/2 cucumber, chopped

  • 2 tbsp Italian Vinaigrette

  • 4 tbsp reduced fat feta cheese

  • 4 tbsp hummus 

  • 2 tbsp avocado greek yogurt dressing


Directions:

  1. Mix greens, chickpeas, cheese, onion, tomato, cucumber, and vinaigrette in a large bowl 

  2. Spread hummus & greek yogurt dressing evenly between both halves of pita

  3. Evenly distribute greens mixture

  4. *can add cold cooked chicken breast for a boost of protein*
