Mediterranean Pita Pocket
Ingredients:
1 whole wheat pita, sliced in half
70g chickpeas
2 c mixed greens
1/4 onion, finely chopped
1/2 tomato, chopped
1/2 cucumber, chopped
2 tbsp Italian Vinaigrette
4 tbsp reduced fat feta cheese
4 tbsp hummus
2 tbsp avocado greek yogurt dressing
Directions:
Mix greens, chickpeas, cheese, onion, tomato, cucumber, and vinaigrette in a large bowl
Spread hummus & greek yogurt dressing evenly between both halves of pita
Evenly distribute greens mixture
*can add cold cooked chicken breast for a boost of protein*
