Ham & Cheese Loaded Baked Potato
Ingredients:
1 large russet potato (about 300g)
3 slices deli ham, chopped
1/2 serving of high protein queso (see page <x>)
20g greek yogurt
100g cooked broccoli
Directions:
Pre-heat oven to 400
Lightly oil and season potato and wrap in tin foil
Place potato directly on oven rack and bake for 50-60 minutes (puncture with knife to test softness before removing)
Remove potato from oven and let cool for a minute or so until you are able to handle it
Cut the potato in half vertically and use a fork to mash the inside being careful to keep everything in the shell of the skin
Lay halves flat & top with greek yogurt, broccoli, ham, and queso
