Ham & Cheese Loaded Baked Potato

Ingredients:

  • 1 large russet potato (about 300g)

  • 3 slices deli ham, chopped

  • 1/2 serving of high protein queso (see page <x>)

  • 20g greek yogurt

  • 100g cooked broccoli


Directions:

  1. Pre-heat oven to 400

  2. Lightly oil and season potato and wrap in tin foil

  3. Place potato directly on oven rack and bake for 50-60 minutes (puncture with knife to test softness before removing)

  4. Remove potato from oven and let cool for a minute or so until you are able to handle it

  5. Cut the potato in half vertically and use a fork to mash the inside being careful to keep everything in the shell of the skin

  6. Lay halves flat & top with greek yogurt, broccoli, ham, and queso
