Turkey Pepper Boats
Ingredients:
4 bell peppers (colors of your choice)
1 lb ground turkey
1 c cottage cheese, blended
1/2 c low fat shredded cheddar cheese
1/2 onion, chopped
1 packet of taco seasoning
Directions:
Pre-heat oven to 350
Cut bell peppers in half and remove all seeds, arrange in baking dish
Cook ground turkey & onions in large pan until brown, drain any grease
Add taco seasoning, cottage cheese, & shredded cheese to turkey and mix together well
Evenly distribute turkey mixture between bell peppers
Bake 50-65 minutes or until peppers are tender
