Sheet Pan Chicken Fajitas

Ingredients:

  • 12 oz chicken breast

  • 2 green bell peppers

  • 1 of each - red, yellow, & orange bell pepper

  • 1 white onion

  • 1 lime

  • 2 tbsp minced garlic

  • 1 Fajita seasoning packet

  • 4 Mission taco tortillas 

  • Greek yogurt & salsa for topping (optional)



Directions:

  1. Pre-heat oven to 400 degrees

  2. Line sheet pan with tin foil and spray with nonstick spray of choice (We love avocado oil spray)

  3. Thinly slice chicken breast, all peppers, & onion and add to pan

  4. Cut lime in half and place cut side up on pan among chicken & veggies

  5. Sprinkle everything with garlic & fajita seasoning and give it a mix

  6. Put pan in oven and let cook for 15-20 minutes or until chicken breast is fully cooked and veggies are tender (to your liking)

  7. Remove from oven, add chicken & veggie mixture to tortillas with some greek yogurt and salsa for a delicious, easy, and low cal fajita night!
