Sheet Pan Chicken Fajitas
Ingredients:
12 oz chicken breast
2 green bell peppers
1 of each - red, yellow, & orange bell pepper
1 white onion
1 lime
2 tbsp minced garlic
1 Fajita seasoning packet
4 Mission taco tortillas
Greek yogurt & salsa for topping (optional)
Directions:
Pre-heat oven to 400 degrees
Line sheet pan with tin foil and spray with nonstick spray of choice (We love avocado oil spray)
Thinly slice chicken breast, all peppers, & onion and add to pan
Cut lime in half and place cut side up on pan among chicken & veggies
Sprinkle everything with garlic & fajita seasoning and give it a mix
Put pan in oven and let cook for 15-20 minutes or until chicken breast is fully cooked and veggies are tender (to your liking)
Remove from oven, add chicken & veggie mixture to tortillas with some greek yogurt and salsa for a delicious, easy, and low cal fajita night!
