White Chocolate Blueberry Dessert Cakes

Ingredients:

  • 300g Nonfat vanilla greek yogurt

  • 120g low fat cottage cheese, blended

  • 30g vanilla protein powder

  • 2 tbsp flour

  • 120g egg whites

  • 20g white chocolate chips

  • 100g frozen blueberries

  • 2 packets or 3g of Splenda or other non-nutritive sweetener

  • 2 tsp vanilla

  • 2 tsp cinnamon

  • 1 tbsp butter


Directions:

  1. Mix together cottage cheese, protein powder, flour, egg whites, sweetener, vanilla, and cinnamon in a large bowl

  2. Add butter to a pan on medium/low heat

  3. Pour batter into pan making 2 separate pancakes

  4. Sprinkle in white chocolate chips and blueberries

  5. Let cook until bottom side is darkened and firm, then flip 

  6. *note - cooking may take longer than normal pancakes*
