White Chocolate Blueberry Dessert Cakes
Ingredients:
300g Nonfat vanilla greek yogurt
120g low fat cottage cheese, blended
30g vanilla protein powder
2 tbsp flour
120g egg whites
20g white chocolate chips
100g frozen blueberries
2 packets or 3g of Splenda or other non-nutritive sweetener
2 tsp vanilla
2 tsp cinnamon
1 tbsp butter
Directions:
Mix together cottage cheese, protein powder, flour, egg whites, sweetener, vanilla, and cinnamon in a large bowl
Add butter to a pan on medium/low heat
Pour batter into pan making 2 separate pancakes
Sprinkle in white chocolate chips and blueberries
Let cook until bottom side is darkened and firm, then flip
*note - cooking may take longer than normal pancakes*
