Greek Yogurt Pancakes

Ingredients:

  • ½ c all purpose flour

  • 1 scoop vanilla whey protein 

  • ½ tsp baking powder

  • ¼ tsp baking soda

  • ¼ tsp salt

  • 1 tbsp splenda (or non-nutritive sweetener of choice; be sure to pay attention to amount conversion)

  • 1 large egg

  • ½ c plain greek yogurt

  • ½ c milk

  • ½ tbsp vanilla


Directions:

  1. Add dry ingredients to a bowl and whisk together

  2. In a separate bowl, whisk eggs then whisk in greek yogurt & milk

  3. Gently fold wet ingredients into dry ingredients

  4. Lightly grease pan and turn on to low/medium heat

  5. Add about ¼ c of the mixture into the pan

  6. Fry on each side for 2-3 minutes or until cooked as desired
