Breakfast Veggie Scramble
Ingredients:
2 eggs
½ c liquid egg whites
½ tbsp butter
2 chopped white mushrooms
¼ chopped white onion
5 diced cherry tomatoes
1 c spinach
20g Feta cheese
Directions:
Melt butter in pan
Add chopped veggies and lightly sautee for ~5 minutes
Mix eggs & egg whites in a bowl before adding to pan with veggies
Keep eggs on low/medium stirring constantly
Once desired consistency has been reached, add eggs to a plate and top with Feta cheese
