Breakfast Veggie Scramble

Ingredients:

  • 2 eggs

  • ½ c liquid egg whites

  • ½ tbsp butter

  • 2 chopped white mushrooms

  • ¼ chopped white onion

  • 5 diced cherry tomatoes 

  • 1 c spinach

  • 20g Feta cheese


Directions:

  1. Melt butter in pan

  2. Add chopped veggies and lightly sautee for ~5 minutes

  3. Mix eggs & egg whites in a bowl before adding to pan with veggies

  4. Keep eggs on low/medium stirring constantly

  5. Once desired consistency has been reached, add eggs to a plate and top with Feta cheese
