Breakfast Tacos

Ingredients:

For tacos:

  • 2 Mission flour fajita tortillas

  • 1 large egg

  • ¼ c liquid egg whites

  • 2 slice thick cut bacon

  • ¼ c shredded low fat cheese

  • 40g plain greek yogurt

For homemade pico de gallo:

  • Diced onion

  • Diced tomato

  • Diced jalapeno pepper

  • Chopped or dried cilantro

  • Juice from ½ a lime

  • Salt & garlic to taste



Directions:

  1. Start with preparing the pico. Chop up all ingredients & combine in a bowl - let set in fridge while you prepare the tacos

  2. Add bacon to frying pan and cook as desired

  3. Drain bacon grease leaving a thin coating in the pan

  4. Add tortillas to pan on medium heat for 30-40 seconds/side - remove & set aside

  5. Add butter pan on low/medium heat and allow to melt

  6. Add eggs & egg whites to pan

  7. Scramble eggs stirring constantly, mix in cheese just before removing from heat

  8. Assemble tacos by adding half of the egg mixture to each tortilla. Top with greek yogurt, pico, & other seasonings as desired.
