Breakfast Burrito
Ingredients:
1 mission burrito tortilla
1 large egg
100g liquid egg whites
20g low fat shredded cheese
50g non-fat plain greek yogurt
0.5 tbsp butter
Optional:
2 slices lean ham (+50 cal – 10g P, 0g C, 1g F)
1 slice thick cut bacon (+90 cal – 5g P, 0g C, 7g F)
Veggies of choice - spinach, onion, tomato, peppers
Directions:
Scramble eggs & whites together in a bowl
Spray pan with non-stick cooking spray. Cook on low-medium heat, stirring constantly
Add greek yogurt, shredded cheese, egg mixture, and any additional ingredients to tortilla and roll into burrito
Add butter to pan on medium-high heat and melt evenly
Add burrito pan & let sit on each side for 30-60 seconds or until nicely toasted
