Breakfast Burrito

Ingredients:

  • 1 mission burrito tortilla

  • 1 large egg 

  • 100g liquid egg whites

  • 20g low fat shredded cheese

  • 50g non-fat plain greek yogurt

  • 0.5 tbsp butter

Optional:

  • 2 slices lean ham (+50 cal – 10g P, 0g C, 1g F)

  • 1 slice thick cut bacon (+90 cal – 5g P, 0g C, 7g F)

  • Veggies of choice - spinach, onion, tomato, peppers


Directions:

  1. Scramble eggs & whites together in a bowl

  2. Spray pan with non-stick cooking spray. Cook on low-medium heat, stirring constantly

  3. Add greek yogurt, shredded cheese, egg mixture, and any additional ingredients to tortilla and roll into burrito

  4. Add butter to pan on medium-high heat and melt evenly 

  5. Add burrito pan & let sit on each side for 30-60 seconds or until nicely toasted
