High Protein Ice Cream Sandwiches

Ingredients:

  • 8oz light cool whip

  • 450g vanilla greek yogurt

  • 200g sliced strawberries (or other favorite fruits)

  • 75g vanilla or strawberry protein powder

  • 16 graham crackers


Directions:

  1. Add cool whip, greek yogurt, and protein powder to a large bowl and whisk together 

  2. Fold in strawberries

  3. Layer 8 of the crackers in the bottom of an 8x8 pan

  4. Add mixture to the pan and top with the rest of the graham crackers

  5. Let freeze for at least 2 hours before enjoying
