Egg White Breakfast Bites

Ingredients:

  1. 2 eggs

  2. 1.25 cups egg whites

  3. 0.5 cups low fat cottage cheese

  4. 0.5 cups shredded cheese

  5. 3 slices of ham (optional)

  6. 3 slices of thick cut bacon (optional)

  7. Spinach (optional)

  8. Tomato (optional)

  9. Onion (optional)


Directions:

  1. Preheat oven to 350

  2. Mix together all ingredients in a large bowl

  3. Thoroughly grease muffin tin

  4. Pour evenly into 12 servings; only fill each tin about ⅔ full

  5. Bake for 20-25 minutes
