Ingredients:

  • 4 oz grilled chicken or lean ground turkey

  • ½ cup cauliflower rice

  • ¼ cup black beans, drained and rinsed

  • ¼ cup corn kernels

  • ¼ avocado, diced

  • 1 cup shredded lettuce

  • 2 tbsp salsa

  • 1 tbsp Greek yogurt

  • 1 tsp lime juice

  • 1 tbsp chopped cilantro (optional)

  • Salt and pepper to taste


Directions:

  4. Add Protein: Top with the cooked protein (chicken or turkey).

  5. Add Toppings: Add salsa, Greek yogurt, and lime juice. Garnish with chopped cilantro if desired.
