Low-Calorie Burrito Bowl
Ingredients:
4 oz grilled chicken or lean ground turkey
½ cup cauliflower rice
¼ cup black beans, drained and rinsed
¼ cup corn kernels
¼ avocado, diced
1 cup shredded lettuce
2 tbsp salsa
1 tbsp Greek yogurt
1 tsp lime juice
1 tbsp chopped cilantro (optional)
Salt and pepper to taste
Directions:
Prepare the Cauliflower Rice: Cook the cauliflower rice in a skillet over medium heat until tender, about 5-7 minutes.
Cook the Protein: If using ground turkey, cook it in a skillet with salt and pepper until browned. If using grilled chicken, slice into strips.
Assemble the Bowl: In a bowl, layer the cauliflower rice, black beans, corn, shredded lettuce, and avocado.
Add Protein: Top with the cooked protein (chicken or turkey).
Add Toppings: Add salsa, Greek yogurt, and lime juice. Garnish with chopped cilantro if desired.
